The Marco Pierre White steakhouse grill and bar at Hotel Indigo, is part of the Cube, a develpoment of restaurants, bars, commercial and residential properties in the heart of Birmingham in this unique building.

The vision was to create a destination restaurant on the 25th floor to compliment the hotel, which sits 2 floors below, providing 52 boutique style rooms.  The hotel also has a spa and health club in the basement.

With panoramic views over the city from its glass fronted alfresco balcony, the restaurant regulalry serves 200 covers with 'affordable luxury' each evening

FSC were responsible for all back of house food and beverage design layouts and specification.  We had to be very clever with our design to match a very tight budget and operational brief. We also worked very closely with the architects and interiro designer,s to bring cooking theatre to the open pass kitchen and practicality to the 'D' shaped open MPW bar, cleverly hiding the washup behin a mirrored wall.
